Recipe: Guacamole & Harvest Salad Lunch Idea

Shell’s Simple Guacamole



  • 2 Avocados
  • .5 Red Onion
  • .5 Green Pepper
  • .5 lime (or 2 drops Lime Vitality essential oil)
  • Black Pepper to taste
  • Sea salt to taste


Mash the avocados to desired consistency (I like mine with some chunks still present), add in sliced up red onion and green pepper. Once mixed well, squeeze lime over the blend and then add black pepper and sea salt to taste.


Summer Harvest Salad




  • 1 10 oz package of Dole Salad Blend Spring Mix
  • 1 16 oz package of Strawberries
  • 1 pint of Blueberries
  • 1 pint of Blackberries
  • 1 Cucumber
  • 1 Green Pepper
  • .5 Red Onion
  • .5 bunch Cilantro
  • 1 lime
  • 1 lemon


Wash the ingredients except for lemon and lime, cut them up to desired size, and throw them in a bowl.

Wash lemon and lime, then squeeze the juice over the salad (this helps it not go gross over the next two – three days as you house it in the fridge if there are leftovers).

Add some walnuts.

Separate into servings, throw on some dressing of your choice, and ENJOY!

The recipe makes 5 – 6 good size bowl servings.

Bonus Suggestion

Serve with warmed up tortilla chips or tortillas for a quick and easy meal!
